Breakfast Salad Ideas

In this post, I share how I make a crunchy, fresh salad for breakfast that gets my day off to a healthy start! I give you all my best breakfast salad ideas in this post to try!

If I have a little time, one of my favorite breakfasts to fix myself is some variation of a breakfast salad. I love the combination of textures and flavors.

Are Salads Good for Breakfast?

The short answer is absolutely! I believe that having a balanced breakfast is important for most people. A breakfast salad can be the perfect way to start your day if you combine vegetables, protein and healthy fats to give you an energy boost but also keep you feeling full for quite a while.

You can come up with limitless combinations to try!

First, Here is my favorite Breakfast Salad combo:

Mexican Inspired –

I start with a bed of lettuce. Romaine is my favorite, it has lots of crunch.

Then I add some sliced avocado, a dollop of sour cream, a scoop of salsa, and a fried egg with crispy edges and a soft yolk.

I also love Trader Joe’s Chili Lime seasoning sprinkled over everything and a drizzle of olive oil.

More Breakfast Salad Ideas:

BLT Inspired Breakfast Salad-

Romaine lettuce, crumbled bacon, avocado slices and halved cherry tomatoes with a hard boiled egg cut in half on top.

Warm Breakfast Salad –

A bed of wilted spinach, topped with roasted sweet potato chunks, bacon, sauteed onions and peppers and mushrooms.

Sweet Potato Breakfast Bowl –

Warm, mashed sweet potato in a bowl topped with chopped pecans, raisins, and cinnamon and nutmeg.

Yum.

Really, any combination of crunchy, fresh veggies plus some creamy component, and maybe a spicy addition topped with a fried or poached egg would be delish!

A breakfast salad gets your day started off with such a great punch of nutrition. Healthy fuel to keep your energy level up and your mood even keel.

Fresh veggies with breakfast are wonderful, they really make a difference! I always feel full longer and have more pep.

Ways to Add Vegetables to Your Breakfast:

  •  Add a scoop of home fermented cabbage kraut to my plate, it goes really well with eggs.
  •  Serve a leftover veggie from the night before… asparagus is one of my favorites at breakfast.
  •  Saute up some mushrooms and peppers and onions to add to my plate alongside eggs and potatoes.
  •  Make a bed of wilted spinach with garlic and top with a fried egg.
  •  Baked sweet potato with butter.
  •  Blend fresh spinach into a smoothie.
