With a few simple ingredients, you can whip up an absolutely delicious pink dragon fruit smoothie. It is so stunningly pink that you will have a hard time not smiling while eating it!

WHAT IS DRAGON FRUIT?

I recently happened upon pink dragon fruit in my local grocers freezer section. While grabbing the frozen mango I like to keep in stock for smoothie making, I snatched up a bag of frozen dragon fruit… I thought it would be a fun new ingredient to try!

I looked it up and read some about it. Apparently it contains lots of vitamin c, and the seeds are a great source of fiber!

Dragon fruit is a tropical fruit also called pitaya, and is the fruit of a cactus. They are said to have a taste similar to a pear and a kiwi.

The flesh of the pitaya is a vibrant pink/magenta color! It is really gorgeous!

Frozen dragon fruit makes a wonderful addition to a smoothie. Bright pink in color and naturally full of antioxidants!

PINK DRAGON FRUIT SMOOTHIE INGREDIENTS

1 cup frozen dragon fruit

1 cup frozen mango

2 frozen bananas

1 cup almond milk

1 teaspoon camu camu powder (For added vitamin C!)

You can’t get much easier than a smoothie!

1. Place all your frozen fruit into a blender. Add the camu camu powder at this point as well.

2. Add your milk in, making sure it cover the blades.

3. Blend the fruit until a thick, smooth consistency.

4. Serve in a clear glass cup so you can enjoy the beautiful color! I love mine in a mason jar with my favorite stainless steel straws!

5. If you have any left over, you can freeze it in a cube tray and blend up later with more milk for a super fast smoothie!

This smoothie made with dragon fruit is thick, creamy and delicious! And the best part is the glorious color... Such a vibrant pink that you will not be able to help smiling while you drink it!
